My favorite VEGAN restaurant for breakfast or lunch, on the lovely Vrijdagmarkt square in the city centre. The Plantin Moretus Museum is across the square.

Very fine salads on a beautiful spot. Don't tell anybody, but on this market place it has presumably the last sunny spot as well, late in the afternoon.
