Exploring the Waters of Tolantongo
We will meet at the "Angel de Independencia" approximately around 6:15am, departing early to escape the city chaos. Our group will have private comfortable transportation. We will stop for an early breakfast in Actopan, a city halfway to our destination. The day is divided into three parts. Pool Tranquility: Start your day relaxing a while in the “pocitos”; naturally warm thermal pools that provide astounding views that soothe & clear the body and mind –perfect for “the gram.” River Relaxation: Next, the turquoise-colored river is well-managed and is naturally warm due to the thermal springs, a complete relaxing experience. Lunch will be alongside the river (weather permitting). Cave Exploration: Finally, you will see awe-inspiring waterfalls and unexpected adventure that our guests have described as “life changing.” We will head out by 5:30PM arriving between 9-10:30PM, full of new experiences and photos to share with envious family/friends. Injuries, while rare, may occur during an outdoor exploration. This experience includes water, creating slippery walking surfaces near the pools and river. There is a bonus cave (optional) with low clearance –be aware of height to reduce risk of head injury. There is inherent risk with any outdoor activity. Protect yourself by wearing proper footwear and being cautious during each activity. Emergency clinics onsite.

Cerámica y chelas, crea arte con arcilla
Join us for “pottery for dummies class” where we take you from beginner to Michelangelo. º You learn how to sculpture exactly what you want: Mugs, plates, pipes, bongs, bowls - whatever you can imagine. You will not be able to glaze the pieces that you sculpted because they need to completely dry and that takes 2-3 days, but don’t worry we will glaze them for you. º You glaze (paint) pieces that we already made for you, so you experience what it is working with color glazes. We provide you with everything you need: 3 different types of clay (stoneware, Oaxacan clay, Zacatecan clay), sculpting tools, glazes, and other ceramic toots. This activity includes the “firing of your pieces” this means that your piece in order to be ready needs to be cooked under really high temperatures in a Kiln. This process takes about 2-3 days, but don’t worry we will ship your pieces after they are done. Shipping within Mexico is already included. Send us a message anytime, we are happy to answer your questions :)

Pre-Hispanic sunrise of Xochimilco
In the South of the Mexico City, we can find Xochimilco, where prehispanic natives built the chinampas on top of a great lake. This are islands used for agriculture, that through time, conformed a great network of canals, in which we will sail through time, enjoying nature and the presence of its flora and fauna. We will embark on a cayuco (small boat), a little bit before sunrise and we´ll silently watch the birds waking up through the mist, realizing that this is a living ecosystem which is home for several native birds, including migrating ones. We are going to row through the canals, the same way as the natives did it so many years ago. We´ll have a small coffe break and arrive to our chinampa in time for breakfast. Then, we will learn from the ancient and new techniques used at the chinampa to produce a sustainable an organic agriculture. Other things to note: It is advise that guests should know how to swim, just in case ; ) There´s a dry toilet for men and women at the chinampa. As well as water and soap to wash your hands and face.

Tolantongo inolvidable
¡Hola amigos!
Fundamentals of Mexican cuisine, mastering corn
Corn is, along with beans and chili, an important ingredient of Mexican gastronomic identity. This practical class is designed to understand this cereal and its process of transformation and consumption, through 4 different dishes. First we will meet at the iconic Portales market, where we will have a small tour and buy some unique ingredients to prepare our dishes. After that, we will head to the kitchen-workshop, where I will present the dishes, give a brief explanation of the ingredients, the stages and particular Mexican techniques to prepare them. We will talk about the different varieties, the polychromy of corn, the utensils that are used to grind it as well as the nixtamalization process. Then we will cook together. As it is usually done in Mexican family parties and gatherings, everyone will be involved in the preparation of the dishes. In the end, we will taste together our 4-course menu consisting of a vegetarian entrée, a dish with insects, one with seafood and a dessert. All of which will be served with a different presentation of corn.

First we will start with some exercises based on the neuroscience of flavor in which we learn about the aromas, flavors, and textures you can find in a cup of coffee. Then we are ready to taste simply the best beans we have in Mexico. Believe me...as a national judge I have access to all the best beans, even the ones that won the national competition.
