Nonantola (Campazzo) in The province of Modena,(Maranello FERRARI CAR -20 min) about half an hour in the Northwest of Bologna,(DUCATI MOTORBIKE,35 min, LAMBORGHINI CAR 10 min) is the only and exclusive area in the world where Aceto Balsamico Tradizionale di Modena (ABTM D.O.P.) is produced, a traditional Emilian cuisine made with Cooked grape must, naturally fermented and vinegarizated, nothing is added and then aged for at least twelve(12) years or Twenty five (25) and until fifty years or more. You will be immersed in a tasting experience (10 different kinds of aged vinegar) and understanding of the aging process of this masterpiece of Italian culinary tradition. On request IN ADVANCE (2 days at least) at the end of the visit you could taste the flavours of traditional balsamic vinegar of Modena in typical dishes (crescentine, prosciutto, salame, formaggio, Parmigiano Reggiano, vino, frittata, fragole, caffè, liquore) and you could buy a Giugiaro bottle of 100 ml of 12 or 25 years old vinegar, both at a special price

Extraordinary experience- the very friendly host gives great I sight into his passion and makes the journey with a good balance of Informatik, interaction and “activities” to a wonderful afternoon. Guido creates a warm and friendly atmosphere, open to give recommendations and a very pleasant story-teller. This journey about Balsamico with it’s well thought-through concept I would rate it highly recommendable.

Certainly one of the best experience we’ve done! Two hours of pure passion. Guido told the vinegar’s history and his one with total dedication and enthusiasm. We could discover the unique sense of Balsamico in an intimate way.

My original plan had included a friend who was prevented from participating by the COVID-19 restrictions. I talked a work colleague into joining me instead and she was grateful that she got the benefit of the adventure into the world of vinegar. And an adventure it was! Guido was extremely well-versed in all aspects of producing high-quality balsamic vinegar and his enthusiasm was contagious. Who would have thought that one of the highlights of my year in Italy would be learning about vinegar and having my taste buds stimulated with the food combinations Guido presented.
