Beyond Tomatoes
This class is designed to introduce the home cook to the basic fundamentals of home canning. Whether new to the idea or renewing one’s interest in the subject, this class will take everyone to their next level. The class covers the basic science involved, tools needed, and offers recipes and demonstrations. Attendees will learn the basics from canning simple fruits and vegetables to more complicated processes for canning soups, meats, and sauces. All participants will get hands-on experience and take home a hot jar of something they helped create.
Timothy Fitzgerald Young is the founder of Food For Thought, creators of organic gourmet specialty foods, such as preserves, sauces and a variety of condiments. Despite being in the canning business for 20 years, Timothy never lost the love of creating, canning and preserving at home and enjoys teaching and sharing his experiences.
The class will take place in Timothy’s beautiful and inspiring home he built from entirely recycled materials almost 25 years ago. A pioneer in the regional green building industry, an avid homesteader and world traveler, you are sure to enjoy the stories, history and adventures as you spend some time in his kitchen.

Timothy Fitzgerald Young is founder of Food For Thought, Inc., creators of organic and wild-harvested gourmet specialty foods. An extensive background in travel and human relief work in the developing world inspired Timothy’s creation of Food For Thought in 1995, with the mission of creating and raising awareness around just and sustainable food systems and to serve as a model to counter the global industrial food system.
Timothy is and avid organic gardener, homesteader hobbyist and likely the only guy you'll ever meet that can cook a roast in a compost pile. Food preservation was always about more than filling the pantry for Timothy as his stories will attest.

We're located between Empire and Honor, an easy drive from Traverse City, and surrounding communities. Class will take place in host built green home among organic gardens, expansive peaceful meadows and forest. This micro farm setting nestled among the Sleeping Bear Dune National Shoreline is a quiet beautiful setting that will set the stage for some storytelling while preserving food and culture.

My husband and I found this to be a delightful experience. Timothy gave us lots of information as well as a tour of the property. We knew a little about home canning, but found that Timothy took that knowledge and added steroids! We learned so much and truly enjoyed our experience It's very relaxed and conducted in Timothy's kitchen. We would recommend this experience to people interested in food preservation.

Do this experience!!! It was a perfect compliment to our Michigan vacation. I am no longer intimidated by canning thanks to Timothy’s training. I can’t wait to take these skills home to our garden! Timothy has enormous experience in zero waste, conscious farming, and food production and shares his wealth of knowledge throughout the class. The location is magical and the tour of the property was fascinating. So glad we booked this!

Timothy was an excellent host who has a deep understanding of food processing in the home. The pigs and gardens were pretty cool too! We learned a lot about the science behind canning and we even received goodies to take home!
