Wat je gaat doen
In a uncontaminated and peaceful context in my country house, I will lead you to the wonderful world of "Scaccia", our typical street and holiday food. Scacce are a kind of focaccia (a sort of bread filled with vegetables and cheese). First of all we will make the dough for scacce using durum wheat flour from an ancient stone mill that grinds only grains from sicilian heirloom seeds like Russello and Timilia. We will add "criscente" (homemade sourdough starter that I inherited from my grandma) and our extravirgin olive oil. I will teach you the tricks for a well-balanced "sfoglia" (the thin layer of bread), tasty and crisp. While the dough grow, we will cook the vegetables for the stuffing: eggplants, onions, spinach, potatoes, broccoli (depends on the season). All vegetables will be organic from our garden or organic market. Then we will make two different kind of sfoglia, one very thin for tomato scaccia and another thicker for other scacce. At this point we can fill and bake scacce. At the end we will have lunch with our handmade scacce, drinking delicious organic Nero d'Avola wine. If the weather allows, we will have lunch outside, in the garden, under our big olive tree! I declare that this activity meets the guidelines for food handling based on the Five Key Points for Safer Food Program of the Pan American Healt Organization.

Little by little I was able to make scacce, learning all the tricks of the trade. For four years I have sold my homemade scacce in an organic market in Ragusa with great success. Now I live in an old stone country house, and I have embraced a simple and slow way of life, far away from city traffic and without TV. I want to preserve the traditions of my family and my land, so I make scacce for my family and my friends – and my guests, of course!

We'll teach our class in the kitchen of "Casa Filosofica", our home and cultural association that connects nature, culture and good food. It's an old stone country house in a sunny untouched place surrounded by olive trees, old oaks, pines, cypresses, indian figs, many fruit trees and an organic vegetable garden. If the weather allows, we will have lunch outside, in the garden, under our big olive tree!
