Wat je gaat doen

I want to share with you what I experienced and what I learned from the most decorated masters. This will be an intimate hands-on workshop. There will only be 6 of us. Upon arrival you will be welcomed with a choice of an espresso or rooibos based beverage. Firstly, in this hands-on workshop, we will be making all the components for a dessert l l'assiete" a beautifully plated dessert served with house made gelato. We will design and create "petits fours" (small sweet bites), as well as a "main desserts" (patisserie). We will make a magnificent assortment of chocolate decorations and I will show you the techniques and basics of sugar art. We will infuse our creations with South African flavors but we will be using European techniques. We will, of course, eat our own creations :) I will help you develop your knowledge and broaden your individual creativity. We will, of course, be tasting our creations afterward with a glass of South African sparkling wine.

From early childhood, I had a deep passion for cooking and making pastries. My love for designing and building stunning, delicious culinary and sweet creations has taken me to some of the most famous restaurants around the world. I refined my skills and developed my own style at these world-renown restaurants: The Fat Duck, El Bulli, 2AM, The Fat Duck Experimental Kitchen and now Coco Safar. I studied and worked under World Champion and highly decorated pastry chefs: Oriol Balaguer and Olivier Bajard. I was also a two-time World Chocolate Masters competitor. I have a degree in culinary science and speak fluent Spanish, English & French. I love making exquisite pastries and I want to share with you my techniques and passion. In my kitchen and chocolate workshop, I will help you develop your own techniques and become a pastry artisan.

I will be hosting the workshop at the Coco Safar professional baking atelier, in Sea Point, where you will also be able to witness the theatre of a live restaurant kitchen in action.
