Wat je gaat doen

Surrounded by plants, vegetables and the warm glow of cosy garden, you will be welcomed in a comfy little private backyard by chef/musician/household Raph. After a little refreshment and conversing about cooking with local typical ingredients but mixed with contemporary and international technique, you will start your 'hands on' cooking class. 3 dishes will be prepared together with ingredients selected by Raph, according to your allergies, intolerances and - possibly - their availability in your own country, so you can replicate the recipe at your home. The course begin with an introduction to the ingredients: theirs season, sustainability, where 'exactly' they are from, and which technique to apply to give the best result. Then you will start cleaning herbs, filleting fish, cutting vegetables and making all the prep to finish your dish and enjoy your meal dining in the garden.

Chef and former owner and manager at different restaurants between Norway's capital, Oslo and his native city of Naples, where he moved back in 2015 to start several projects in the city’s thriving food business. Soon he got fed up by the constraints of the restaurant circuit and decided to throw all limitations and routines out of the window. His goal: to achieve total freedom away from the boundaries of standardized dining experiences. He developed his idea of cooking, focusing on vegetables by drawing on his experience in a biodynamic farm in Oslo, “neglected” fish – which on the contrary is highly flavorsome and rich in taste and tradition – and sustainable ingredients farmed naturally or in the wild. He is also very keen on food fermentation processes and is continuously experimenting with preservation techniques.
