Wat je gaat doen

In this class, you'll learn all the technic of fermenting homemade Miso.

I'll also tell you about types, uses, the process of fermentation, and history. So, you'll learn all about Miso in my workshop!

* Please mind that you'd need 6-12 months to let the Miso sit to ferment before start eating it. No worries, it's not difficult. :)

1. Tasting of different types of Miso.

2. Explaining the process of fermenting Miso and the ingredients.

3. Measuring the ingredients and mashing and mixing all.

4. Demonstration of how you need to take care of your Miso when you get home.

5. Packing your pre-fermenting Miso in a plastic bag which I prepare.

6. Taking the Miso back home. You would need 6-12 months to ferment it.


The process takes a while but it's not difficult. Moreover, your Miso will be a unique souvenir in the end. The handbook I made and the after support by e-mail will guide you through the fermentation process so that you won't suffer after the workshop.

I 'd like many people to experience an amazing taste of homemade Miso. It's almost like magic!

The level of the workshop is from beginners to experts. Please feel free to ask me any questions about Miso. (Ingredients are all organic or naturally produced)

Love fermenting Miso more than other ferments. I believe in Miso! My passion for teaching about Miso brought me from up-north Norway and to south-down Newzealand to do Miso workshops in overseas. In 2019, I helped 193 people fermenting Miso.

The 1st time I ever made homemade Miso was in 2011. I didn’t expect the homemade Miso to taste so good. The taste was not only salty but a bit sweet and full of Umami. I was thrilled because it had a richer flavor than the miso I can buy on the market. This first experience encouraged me to organize Miso workshops.

I'm sure that my workshop is a very unique and unforgettable experience, and the Miso you make will be a unique souvenir to bring back home with you.

Waar je naartoe gaat

I will conduct my workshop at my family home close to Unoki station in Tokyo. The Unoki station is accessible by Tamagawa line from Kamata station or Tamagawa station.
We will meet at the Unoki station and walk to the workshop place. It takes about 5 mins.

Hats off to Akane! If you are interested in Japanese cuisine, I would highly recommend to take this experience. Unique, Knowledgable above all so much fun!! Akane made everyone feel welcome and included, and generally is extremely friendly and warm. We all loved Akane’s miso making experience! Akane explained different ingredients and varieties of miso in Japan. She even brought her own miso to let us try how each miso tastes different. Akane’s explanation was very easy to understand. She showed us many pictures of ingredients and the process behind. It was a great start to know all about the basic but deep miso knowledge before making. Then our making experience started. Akane prepared soy beans, rice Koji and salt. Those ingredients were not just the normal ingredients you can find at the supermarkets. Each of them were coming from Akane’s own network. So Akane knows each producers and can tell their stories. I really loved the story about the salt guy...! I must not forget to mention about Akane’s puppet show. The birth of the miso! It was so cute and dramatic! Through this show we could know what was going to happen in our miso jar. Cannot wait to meet my new born miso in Summer. Thank you Akane for the great experience! I would definately participate your experience next year too!!

This workshop was one of the highlights of our trip <3 Akane is a perfect host, wonderful teacher and is truly passionate about miso and everything related to fermentation. She explained her philosophy and view on life, and how personal relationships with our family and friends can also "ferment", what I think is beautiful. She provided excellent guidance during her workshop, and provided a pretty and practical workbook. She was very patient with all our questions and helped us in any way she could. She uses high quality organic soy beans from her friend that has a farm of the north of Tokyo. She was able to help us order some of the soy beans and soy sauce of this farm and they were delivered to our hotel the next day. She speaks perfect English and happily shares her culture with her guests. I consider her my friend and I will welcome her with open arms if she ever comes to Belgium. Thank you beautiful, keep doing the great work you're doing <3 I would recommend this workshop to everyone who wants to learn about miso, fermentation and the Japanese hospitality.

This was a great experience. Akane has a wealth of knowledge about fermentation, and she was excited to share it with us. I thought i know a lot about fermentation, and just came to learn how to make miso, but I really learned a lot of new information. Akane's passion for the subject was plain to see. It was a truey wonderful experience. If you are interested in fermentation, definitely book this experience.
